This is my favourite plant-based recipe!I have tried different versions of this pasta, but this is my favourite one: INGREDIENTS: 12 oz of spaguetti 2 ripe avocados 2 cloves of garlic 1/2 cup of basil leaves salt and pepper to taste 1/3 cup of grapeseed oil or olive oil 1 cup of cherry tomatoes, halved1/2 canned corn kernel, drained and rinsed DIRECTIONS: In a large pot of boiling salted water, cook pasta according to package instructions; drain well.To make the avocado sauce, combine avocados, basil and garlic the bowl of a food processor; season with salt and pepper, to taste. With the motor running, add olive oil in a slow stream until emulsified; set aside. In a large bowl, combine pasta, avocado sauce, cherry tomatoes and corn. Serve immediately.
